SAUCES & PICKLES: Peanut Sate Sauce (250ml)
Sate (or Satay) is a typically Indonesian dish consisting of small pieces of meat grilled on a skewer and served with a spiced peanut sauce. Sate Sauce is also excellent with Veg or as an addition to Nasi Goreng.
This authentic Indomex Sate Sauce is a sublime blend of roasted peanuts, chilli, garlic, coconut and love.
INDONESIAN STYLE CHICKEN SATE RECIPE (serves 3-4)
INGREDIENTS
- 300-400grams Protein (Chicken Breasts, Prawns or Pork Fillet)
- ½ cup Indomex Ketjap Manis (optional for marinade)
- 100ml Indomex Sate Sauce
- 1-2 Tablespoons Indomex Seroendeng
- 1 pkt Coconut Cream Powder (to make 300ml Coconut Milk)
- 12-16 x 10cm Bamboo Skewers
- 2 Red Birds Eye Chilli (optional)
- Chopped Coriander (optional garnish)
To Serve
- Diced Red Birds Eye Chilli
- Chopped Coriander
METHOD
Chicken Skewers
- Cut the Chicken Breasts into cubes or long strips as preferred and marinade for 15 minutes in Indomex Ketjap Manis
- Soak the wooden skewers in water for 10-15 minutes and grill over hot coals until cooked through but still juicy
Sate Sauce
- Mix the Coconut Cream Powder with 300ml of water and ensure completely blended
- Add 100ml of the Coconut Cream and 100ml of the Sate Sauce to a saucepan and bring to a gentle simmer, stirring continuously to prevent burning
- Remove from heat and pour a little over the grilled Chicken Skewers
Place the remainder of the Sate and Coconut Sauce mix into a ramekin and serve as a dipping sauce with the Skewers
Sprinkle 1-2 tablespoons of Seroendeng over the Chicken Skewers, sprinkle over chopped chilli (optional) and chopped coriander (optional) and serve immediately
