Veganuary – Vegan Salad Dressings

 

Layer the flava on your vegan salads with these tasty salad dressings! 

 

Vegan Caesar

Serves 6

Ready in 5 minutes

 

Whisk together  1tbsp extra virgin olive oil,  3tbsps vegan mayonnaise, juice ½ lemon, 1 clove garlic, crushed,  1tbsp capers (from a jar), drained and chopped, and season with plenty of freshly ground black pepper. Store in the fridge, covered, for up to 3 days. 

 

Vegan lemon and herb

Serves 8

Ready in 5 minutes

 

Whisk 1tbsp white wine vinegar with 1tbsp Dijon mustard, juice and zest of 1 lemon,  3tbsps extra virgin olive oil, 1/2tbsp dried oregano,  1tbsp dried thyme, 1tbsp chopped chives and a pinch of crushed chilli flakes. Store in the fridge, covered, for up to seven days.
